One of our favorite, most often repeated meals for any occasion whether it’s hosting a crew of 10 year old boys, being snowed in during a blizzard, or just because it’s Monday – we love our nacho nights. This vegan queso by Detoxinista was one of the first vegan recipes I made and was introduced to the wonderfully creaminess that is blended cashews. Who knew?! Put out your favorite nacho toppings like black beans, jalapenos, Gardein beefless crumbles that you can season into a spicy taco meat, and top with guacamole, Tofutti brand vegan sour cream, and whatever else tops your nachos! Or use being romaine leaves or collard greens for a healthier taco shell. We often serve the queso as a dip for a quick and easy appetizer.
