I was gifted a block of vegan Parmesan from Violife, all the way from Greece! A creamy risotto was just begging for it. I veganized this recipe by using vegetable broth, Earth Balance butter, vegan wine, and Violife, with some additional minor adjustments. The Violife melted divine, but you can use your favorite vegan shreds until we see Violife in the US (it’s coming, I’ve heard from a little birdie!)
