Every Friday, we treated ourselves to Chipotle after my son’s parkour practice. A little too often, for my own liking but what’s a busy parent to do?When Chipotle started having the widespread e.Coli trouble at the end of 2015, we thought it was a good time to take a break and not a moment too soon. Although a welcome break for me, weekly traditions die hard for a 10 year old so home cooked sofritas it was! Although I modified it a bit, I started here, with fellow Baltimorean Yup, It’s Vegan Copycat Chipotle Sofritas recipe. Mama was a hero that day.
