My go-to pancake recipe is the Puffy Pillow Pancakes from PPK. But every now and then I like to mix up the flavors. With left over canned pumpkin, I mixed it in the batter along with traditional pumpkin pie spice. You may need to add a touch more flour if the pumpkin made the batter to liquidy. Served with maple syrup and toasted pecans, who needs pie?!
