I’ll never stopped being amazed that you can throw some fruit and nuts into a food processor and end up with dessert! I used strawberry-banana nicecream as the filling part, sweetened with a touch of maple syrup. For the crust I threw a big handle of nuts, it was a mixture of walnuts, almonds, and pecans because I was running out of everything at the time, along with a couple pitted medjool dates into the food processor. I processed them until I could form it into a ball into my hands. You want it to be able to stick together but not be gooey. I then pushed some of the crust mixture into the bottom of silicone cupcake liners and froze while I prepared the filling. I then poured in the filling and froze until serving. Simple, quick, but you would never know it when you’re eating it! They are shown here topped with Soyatoo Whipped Soy Topping in the can and chopped vegan chocolate.
