My go-to pancake recipe is the Puffy Pillow Pancakes from PPK. But every now and then I like to mix up the flavors. With left over canned pumpkin, I mixed it in the batter along with traditional pumpkin pie spice. You may need to add a touch more flour if the pumpkin made the batter […]
Food Inspo
Here I share some recipes by other’s that I’ve enjoyed or some of my own meal ideas for when you just need a little inspiration to get your own ideas flowing. This collection ranges from a little more involved to as simple as throwing a few things into a blender. When I was first learning to cook (as recent as 2013!), I needed to follow a recipe to the T, the thought of trying to imitate something solely from a photo was – well, it just wasn’t going to happen. But if you’re comfortable in the kitchen, these will not be that challenging but if you’re new and still finding your way, trust me, you *can* wing it and come up with something completely delicious with just the help of a few quality ingredients, your taste buds, and a little inspiration.
Food Inspo: Portobello Mushroom Steak
Let me preface first with that I’m the furthest thing from a mushroom person. I pick them out of everything, I just can’t handle the texture. My friend Mary of Nom Yourself insisted she could make a portobello steak that even I could make. We never got around to that challenge so I took it […]
Food Inspo: Oil-free Baked Falafel Bites
I love falafel but it can often feel a bit heavy and not leaving me feeling my best. This oil-free, baked version is one of our favorite recipes from the Oh She Glows cookbook. I’ve probably made more recipes from this book than any other, definitely worth the very small investment.
Food Inspo: Well Rounded Breakfast
I woke up one morning after the holidays craving all the nutrients. I put together a balanced feast of green juice with celery, ginger, green apple, spinach, and mint, a simple tofu scramble, and half a slice of avocado whole grain toast with chili flakes and sprinkling of sesame.
Food Inspo: Frosted Chocolate Shortbread Sugar Cookies
Frosted Chocolate shortbread sugar cookies for the Christmas party. Adapted from the recipe in the December 2015 issue of @vegnews. I used a little beet juice to dye the pink frosting and a touch of matcha powder for the pale green with a drop or two of mint extract.
Food Inspo: Acai Bowls
Acai bowls are easy to put together and instantly transport you to tropical lands. You can usually find acai packets in the freezer section of your natural markets, just take out a packet, blend it with a frozen banana to sweet, and maybe a splash of liquid to move it along. You can mix in […]
Food Inspo: Marshmallow Chocolate Chip Cookies [link to recipe]
I was inspired myself by the gorgeous site of Milking Almonds and I’m so glad I was because these are my new favorite cookies. I use Dandies marshmallows which are vegan and Equal Exchange vegan chocolate chips. Equal Exchange is certified fair-trade and slave-labor free. It’s important that we reject cruelty wherever it may rear […]
Food Inspo: Pulled BBQ Carrot Sandwiches
I’m not sure if this qualifies as food inspo or a recipe because there isn’t much of recipe to begin with. But when you’re a (now vegan) BBQ girl such as myself, you don’t do without, you innovate! Buy a bag of pre-julienned carrots, or julienne them yourself, buy your favorite vegan BBQ sauce, some […]
Food Inspo: Roasted Plum + Hot Buckwheat Cereal
Roasted plum + hot buckwheat cereal served with a drizzle of coconut yogurt, maple syrup, and raw goji cacao bites. A nice change from the typical oatmeal.
Food Inspo: Tex-Mex Casserole
Another great recipe coming from the Oh She Glows, it’s called the Crowd Pleasing Tex-Mex casserole for a reason!
