Seared Tofu Bánh mì sandwich, using more fresh food from @relayfoods – they carry my favorite brand of tofu from Twin Oaks – try it with the herbed flavor tofu for a flavor punch. This is my favorite sandwich to pack up for a picnic. Pickled veggies, fresh cilantro, mint, and a spicy sauce – […]

“May our hearts overcome our appetites” – Unknown
Peace begins on our plate. Why fill our bodies with suffering and death when we can fuel them with the endless healing plant foods nature provides for us right from the earth? There’s a reason plant foods are so beautiful in their natural state. Although veganism is not a diet but a social justice movement, the plant-based diet is the ONLY diet scientifically proven to prevent, treat, and in many cases reverse, heart disease and the other top 15 killer diseases in the US. I encourage you to watch the non-graphic Forks Over Knives, Food Matters, soon to be released What The Health, and Cowspiracy, or read How Not To Die by Dr. Michael Greger, to find out why it’s in our own best interest to eat plant-exclusively. Veganism is a win-win for the animals, our planet, and ourselves. The only thing you’ll be giving up is the cruelty.
Food Inspo: Creamy Mushroom and Thyme Risotto
I was gifted a block of vegan Parmesan from Violife, all the way from Greece! A creamy risotto was just begging for it. I veganized this recipe by using vegetable broth, Earth Balance butter, vegan wine, and Violife, with some additional minor adjustments. The Violife melted divine, but you can use your favorite vegan shreds until […]
Chocolate + Peanut Butter Overnight Oats
Quick and healthy breakfasts can be a challenge for me with the morning rush. My day no longer feels right if I don’t start it off with Chocolate Peanut Butter Overnight Oats because they require no cooking, can be prepared in under two minutes, and are ready to grab and go in the morning. I […]
Food Inspo: Cherry Smoothie Bowls
There really isn’t much difference between a smoothie and a smoothie bowl other than the serving dish and a little less liquid. But something about eating a smoothie from a bowl makes it feel like more of a special treat. My favorite is a combination of frozen cherries, banana, a medjool date, coconut, and rice […]
Poached Avocado and Tempeh Bacon Hash with Sage Hollandaise Sauce
I often had reoccurring dreams of a breakfast I once had during a trip to Philly at the Vegan Commissary that I just never took the time to try to recreate at home involving hollandaise sauce – vegan, of course. It was my first experience with the sauce because traditionally it was served over runny […]
Food Inspo: Meatball Subs
Eating vegan doesn’t have to be a chore or boring. With Gardein’s Meatless balls found in many grocery freezers in the natural foods section, you can whip together the comfort food you already love. Simmered in your favorite sauce and topped with Follow Your Heart shredded mozzarella, these mini-subs are impossible to resist.
Food Inspo: TUSCAN BEAN, FENNEL & SAUSAGE SOUP [link to recipe]
Oh my, this soup is everything. I can’t think of a more comforting combo for a cold winter’s day than bean and vegan sausage and such a wonderful mix of flavors like fennel and sundried tomatoes, a slight nod to my Italian heritage. This comes from the kitchen of Compassionate Cuisine, the culinary program from Catskill Animal […]
Food Inspo: Choco-Cherry Nicecream
I’ve mentioned before, and you are most likely are already aware, but by throwing frozen banana slices into a food processor, it will turn into a soft serve ice cream made from just that one ingredient. Delicious as is, but don’t stop there! Mix in some cacao or cocoa powder and frozen cherries, maybe a […]
