veggie tacos

I love to throw things into a tortilla, call it a taco, and hope it works. I find when you call it a taco, it always works. Inspired by Slow Club Cookery’s spring tacos: grilled asparagus, zucchini, quick pickled purple cabbage, radish, Madagascar pink rice and a creamy lemony-dill dressing.
