I’m not sure if this qualifies as food inspo or a recipe because there isn’t much of recipe to begin with. But when you’re a (now vegan) BBQ girl such as myself, you don’t do without, you innovate! Buy a bag of pre-julienned carrots, or julienne them yourself, buy your favorite vegan BBQ sauce, some good buns and you’ll have a satisfying dinner that makes you wonder why people are still eating BBQ’d animals. (Okay, everything makes me wonder why people are still eating animals!) Pour the bottle of sauce over the carrots in a pan and simmer slowly until the carrots are nice and tender. It’s as simple as that.
